Do you ever notice that with the change of the seasons, you crave different food? That is exactly what is happening to me. As spring rapidly approaches I am starting to crave salads and fresh fruit. Below is a quinoa salad recipe that I came up with for a recent potluck that I attended. I added Virgin Red Palm Oil to the mix to try something new. My friends at the potluck were glad that I did!

Ingredients:

  • 3 cups cooked and cooled quinoa
  • A bunch of green onions finely chopped
  • 1 red yellow pepper diced
  • 4 tomatoes diced
  • 1 cucumber diced
  • 6 tablespoons Virgin Red Palm Oil
  • Salt and pepper to taste

 

Method:

In a large sauce pan, add 4 cups of water and 6 tablespoons of Virgin Red Palm oil, and boil. Once the water is boiling add 2 cups of rinsed quinoa, set to low and put a lid on top of it. Cook for about 25 minutes. While the quinoa is cooking prepare the vegetables and put into a large bowl with a pinch of salt and pepper. Once the quinoa is finished cooking, set aside and let it cool. Once it is cooled, add to the vegetable mix and stir. 

That’s it! Simple, easy, delicious, and good for you. The Virgin Red Palm Oil adds such an incredible flavor that you do not need to put any dressing on it.
