One of our favorite dishes to make is Moyo, a traditional West African sauce. In a large sauce pan add virgin red palm oil and onion. Sauté until the onions are translucent and add chunked tomatoes. Cook over medium heat until the tomatoes are soft. Add a little cayenne pepper for extra spice (if desired). You can also add some chopped spinach or swiss chard if you like. Serve over rice or fonio and enjoy!
