Pancakes are a favorite in my household, so I am always trying new recipes to spice things up a bit. The following recipe I made by accident and is now a favorite of ours. The Baobab and fruit tastes absolutely delicious together. The best part, these pancakes are good for you and gluten-free.

Gluten-free Pancakes

Ingredients:

2 tbsp Atacora Baobab Powder
1/3 cup brown rice flour
1 cup oats
1 tsp baking powder
1 ripe banana
1 ½ cups rice or almond milk
1 tbsp cooking oil
½ cup of berries

 

Method: 

Mix all dry ingredients in a large bowl and set aside. In a separate bowl, smash the banana to make it like a past. Then, add the cooking oil and the rice or almond milk, and mix well. Poor the liquid mixture into the dry ingredients and mix well. Once all of the ingredients are combined gently fold in the berries.

Heat a non stick cooking skillet and once it is hot, spray with non stick cooking spray. Gently poor batter into the skillet. For added fun, I make my pancakes into fun shapes for my kids. Once the pancakes start to bubble and the edges start to lift, it is time to flip. Serve immediately and enjoy!
