Lemon bars are a favorite in our house and are perfect for relaxing spring picnics. For extra nutrients and flavor, and to make this delicious dessert a little bit more healthy and nutritious, we added a secret ingredient, Baobab Superfruit Powder!
For the Crust:
1/2 cup (1 stick) unsalted butter, softened to room temperature, (dairy free butter can be used as well)
1/2 cup granulated sugar
1 cup all-purpose flour
pinch of salt
For the Topping:
2 large eggs
3/4 cup granulated sugar
1 teaspoon fresh lemon zest
2 1/2 tablespoons all-purpose flour
2 tablespoon Atacora Baobab Superfruit Powder
1/4 cup fresh lemon juice
Lets get baking:
Preheat oven to 350 degrees Fahrenheit. Grease a 8×8-inch baking pan and set aside.
To make the crust, in a large bowl, cream together butter and sugar until light and fluffy, about 3 to 5 minutes. Add flour and salt. Beat on low speed until dough is mixed well.
Dump the crust into the prepared pan and use your fingertips to press the dough into the bottom of the pan. Bake for 15 to 18 minutes until just browned around the edges.
You can make the filling while the crust is baking. In a medium bowl, whisk together eggs and sugar until well combined and slightly thick. Add flour, lemon juice, baobab powder, lemon zest and whisk until blended.
Pour the filling over the baked crust and bake for 18 to 20 minutes, or until lightly browned on top and no longer jiggling in the center.
Once completely cooled, slice lemon bars into nine squares and place in a tupperware or on a serving platter. Powder sugar can be dusted on top as well. Enjoy!

These lemon bars are a real treat and are very easy to make! I would never make them without using Atacora Baobab Superfruit Powder as it adds a delectable flavor! Also, I do not feel as guilty indulging in these delicious treats knowing that I am getting some beneficial nutrients.
