We’re trying out some new healthy dessert recipes for Thanksgiving! Check out these amazing Vegan Baobab Pumpkin Pudding & Chia Pudding Parfaits.

Baobab Pumpkin & Chia Parfait

 

The holidays are typically tough on the waistline so we’ve been hard at work creating healthy dessert recipes that will keep you on track! This one was definitely a home run. It can easily replace a piece of pumpkin pie on Thanksgiving which will save you hundreds of calories! We even boosted the nutritional content of this already healthy & clean dessert by adding in some #baobabmagic with our traditionally harvested Baobab Powder from Benin, Africa!

PUMPKIN PUDDING:

1 15 ounce can pureed pumpkin
1 2/3 cup plant based milk of choice
1 tsp Atacora Baobab Powder
2.5 tbsp corn starch
2 tbsp molasses
1/4 cup brown sugar
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt

Whisk all ingredients until smooth and well combined. You could even use your blender!
Next, transfer mixture into a saucepan and simmer over medium-low heat until thickened, about 6-8 minutes. Pour your mixture into a bowl, cover and refrigerate until set and firm, preferably overnight.

CHIA PUDDING:

1/3 cup chia seeds
1 1/2 cups plant based milk of choice
2 tbsp Atacora raw African Honey/maple syrup/agave
1 tsp Atacora Baobab Powder
1/2 tsp vanilla

Combine all the ingredients in a jar. Cover the jar with a lid and give it a vigorous shake & then stir.
Chill for about an hour, then return to the jar and shake it up/stir. Let chill for at least 4 hours but overnight is even better.

ASSEMBLY:

When you’re ready to eat these little tasty treats start by layering the chia pudding & pumpkin pudding in small glass/dish of your choice. We topped ours with a mix of gluten free granola, spiced pecans & walnuts. You could even add on a dollop of whipped coconut cream! DELICIOUS
