These Baobab Energy Balls make the perfect afternoon or pre-workout snack, full recipe below!
Do you find yourself constantly caving to a vending machine or gas station in the afternoon because you need a snack? Try spending 15 minutes prepping these Baobab Energy Balls tonight so that you have a healthy snack readily available all week long! Did we mention that these pack perfectly in kids lunch boxes too?
All you need is a few ingredients, a food processor, bowl & your hands! You can even get the kids involved when it comes to rolling the balls – what kid doesn’t love to get their hands dirty!
These have been sprinkled with some #baobabmagic! That little bit of extra love boosted these with extra Vitamin C, Calcium, Potassium and Prebiotic Soluble Fiber!

- 6-8 pitted medjool dates
- 1 cup old fashioned oatmeal – you could also use instant (GF if needed)
- ½ cup ground chia of flax seed
- 1/4 cup cacao nibs
- 2-3 tsp baobab powder
- 1 tsp vanilla extract
- ⅓ cup shredded coconut
- ½ cup cashew butter or sunflower seed butter (or any nut butter of choice)
Soak medjool dates in hot water for about 10 minutes.
Remove dates from the water (save the water) and place in your food processor. Pulse until smooth, scraping down sides and adding a little bit of the reserved water as necessary until it reaches a paste consistency.
In a large bowl, combine the oatmeal, coconut, baobab powder, ground chia/flax seed and cacao nibs.
Next add date paste, vanilla & nut butter to the large bowl.
Stir to combine all of the ingredients – we find this works best with your hands!
Refrigerate dough for 20-30 minutes and then form into balls. Store in the refrigerator in a sealed container.
