We think you’ve earned a healthy treat after your long week! Give these Raw Baobab Chocolate Truffles a try tonight – you won’t regret it!
Not only do these require just a few simple ingredients but they also are extremely easy to make. You could even get the kids involved in the production line!
These truffles are filled with “good for you” ingredients that will nourish your body with extra vitamins, minerals & even prebiotic soluble fiber!
- 1 3/4 cups of soft medjool dates, pitted (soak in warm water if not soft)
- 2.5 tbsp raw cacao powder or cocoa powder (will need additional for coating)
- 1 tbsp @atacorawellness baobab powder
- 1/4 tsp espresso powder
- 1 tsp vanilla
- 1/8 tsp salt
- Shredded coconut as an optional coating!
Place all ingredients in a food processor or high powered blend and blend until you have a very smooth & uniform consistency. Use a spatula to scrape down the sides. Add a little melted coconut oil or even water that you soaked the dates in if the mixture is too dry.
Next scoop out the mixture and roll into bite sized balls and place on a parchment paper lined baking sheet. Once you have finished rolling all of the balls, roll them into either more cacao powder or shredded coconut. Store in the refrigerator until ready to eat! Enjoy!
